Ingredients

  • 1 Kg Lamb
  • 1 Onion
  • 2 Cloves of Garlic
  • a teaspoon of Ginger (if available)
  • 2 teaspoons of Sri Lankan Curry Powder
  • 1 teaspoon of Chilli Powder
  • 3 Cardamons (i suggest cardamon powder…)
  • 3 Cloves
  • 1 teaspoon of salt
  • 2 tablespoons of brown vinigar
  • Cinnamon
  • Pepper
  • Curry Leaves
  • About 2 tablespoons of oil, just enough to brown meat

Method

  1. Cut up lamb and place in saucepan with all ingredients except oil.
  2. When meat is sufficiently cooked, drain gravy from saucepan.
  3. Add oil and saute (=pan fry) lamb
  4. When browned, add gravy that was drained and simmer untill meat is well cooked.
  5. It usually takes about an hour (maybe longer depending on the cut of the lamb) all-up. You have to taste the lamb to make sure it is soft !!
